This Asian Smashed Cucumber Salad is so refreshing and tasty. The cucumber has the perfect crunch and it soaks in all the flavors of the sauce. These have a nice sour crunch to complement my Creamy, Peanutty Noodles!
3 Persian cucumbers
Cucumber Sauce
2 tbsp rice vinegar
2 tsp sugar
2 tsp soy sauce
½ tsp salt
2 tsp sesame oil
2 cloves minced garlic
Cut cucumbers into 2-inch pieces, then smash with the side of your knife.
Place them into a strainer and toss in some salt and sugar. We’re removing the excess moisture from them so they’re nice and crunchy. Let sit for a few minutes then rinse and drain.
To a bowl, add in all the cucumber sauce ingreidents, and mix. Add cucumbers in. Let them sit for 15 minutes to soak.
