Raspberry Vanilla Scones

Spring has sprung and these Raspberry Vanilla Scones are the perfect buttery, spring treat!

2 cups all purpose flour

⅓ cup sugar

½ teaspoon salt

3 teaspoons baking powder

½ cup unsalted butter, grated

¾ cup half and half

1 egg

1 teaspoons vanilla extract

1 cup frozen raspberries

  1. Preheat oven to 375F and line your baking sheet with parchment paper.

  2. In a bowl, add the dry ingredients of flour, sugar, salt, and baking powder. Mix together.

  3. Add in grated butter and mix using your hands, breaking up the pieces of butter. Set aside.

  4. In a small bowl, add half and half, egg, and vanilla extract. Beat.

  5. Add wet ingredients to the flour mixture. Mix just until combined.

  6. Fold in raspberries.

  7. Put the dough onto a floured surface. Cut into 8 pieces. Place onto baking sheet and brush on egg wash. Bake for 18-20 min until flaky and golden brown. Enjoy!
