I started meal prepping again because working from home and watching the kids all day kinda put me in a rut. I needed some quick and healthy options that I could mix and match so here is one of my favorite combos lately- a Greek Chicken Souvlaki-inspired Bowl.
Souvlaki Marinade
1 lb chicken breast
2 tsp dried oregano
1 tsp paprika
4-5 cloves garlic, minced
1 tsp kosher salt
zest and juice from a whole lemon
2 tbsp olive oil
In a bowl, mix together the oregano, paprika, garlic, kosher salt, lemon juice and zest, and olive oil. Add chicken breast and marinate for at least 1 hour to overnight.
Grill at 375 for 6-8 minutes or until cooked through.
Plate with roasted vegetables, feta cheese, cucumbers, hummus, and your favorite toppings! Enjoy!
