If you feel like you need to squeeze a little more veggies into your diet this week, this Roasted Veggie Sandwich is the way to go. To keep it lean and green, pair this with a green juice!
red bell pepper
eggplant, sliced
red onion
lettuce
arugula
carrots, julienned
microgreens
spicy avocado hummus, or your favorite spread
sliced toast
Oil a heated grill pan and add the red bell pepper, sliced eggplants, and red onion. Season with salt and pepper until they have beautiful grill marks on them.
Spread your hummus on both sides of the toast.
Add lettuce, arugula, carrots, and layer on the grilled veggies, and microgreens.
Close up the sandwich, slice, and enjoy!
