Korean Cold Spicy Noodles │ Bibim Guksu

You may have heard of Bibimbap, the Korean rice dish. But today I am going to show you Bibim-guksu, which is a Korean cold spicy noodle dish that has the same sauce base as the rice bowl!

1-2 packets of dried ramen noodles

Tofu cubes

Shredded cucumbers

Toasted sesame seeds

Kimchi

Spicy soy dressing:

2 tbsps gochujang

2 tbsp soy sauce

1 tbsp honey

1 tbsp rice vinegar

1 tbsp sesame oil

1 clove garlic, minced

  1. In a bowl, combine all the ingredients for the spicy soy dressing and mix well.

  2. Cook ramen noodles according to packaged instructions. Drain and rinse.

  3. In another large bowl, add the noodles, and pour in the dressing. Top with tofu cubes, kimchi, cucumbers, and toasted sesame seeds. Enjoy cold!

Even though I used instant ramen packets, this recipe is just as good as its rice counterpart! It’s spicy, it’s sweet, so fresh, and full of flavor!
