Pasta Amatriciana

Pasta Amatriciana is a classic tomato Roman-based dish that I don’t see offered at a lot of restaurants, but it is so simple and delicious!

1 shallot, diced

1 - 28oz can San Marzano tomatoes

4 oz. pancetta, or bacon, diced

  1. Pour out the canned tomato into a large bowl. Crush slightly with your hands. Set aside.

  2. Cook down and render the pancetta. Once crispy, remove and set aside.

  3. In the same pan (add a little more oil if needed), add in the shallot and cook until it is fragrant.

  4. Add in crushed tomatoes and season with salt and pepper. Allow it to simmer and cook down for 10 min.

  5. Cook pasta according to packaged instructions. Reserve some pasta water and add pasta and pasta water into the tomato sauce. Add the pancetta. Simmer for a few minutes to allow the pasta to soak in allll the flavors.

  6. Plate and add a nice helping of parmesan and chili flakes. Enjoy!
