The Fluffiest Pancakes

The fluffiest, most perfect pancakes!

1 cup all-purpose flour

2 tablespoons sugar

½ teaspoon salt

2 teaspoons baking powder

¼ teaspoon baking soda

¾ cup milk

1 egg

1 teaspoon vanilla extract

2 tablespoons melted butter

  1. In a large bowl, combine flour, sugar, salt, baking powder, and baking soda. Mix well and set aside.

  2. In a measuring cup, combine milk, egg, vanilla extract, and melted butter. Mix well and pour the liquid into the dry mixture. Stir until it just comes together. A lumpy batter is okay. Let it sit and hydrate for 2 minutes.

  3. On a nonstick pan on medium-high heat, melt a little bit of butter to coat the bottom of the pan. Let it get hot and then add ¼ cup of pancake batter at a time.

  4. Cook it on each side for about a minute and a half and then flip. It'll be nice and lacey and delicious.

  5. Top with salted butter and maple syrup or add your favorite mix-ins into the batter. Enjoy!
