What’s your favorite thing about fall? Mine is baking! Love making this custardy pumpkin flan. Happy Fall! 🍁🍂
Caramel layer:
¾ cup sugar
¼ cup water
Pumpkin custard layer:
6 eggs
1 cup pumpkin purée
½ cup sugar
pinch of salt
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
3 cups milk, warmed
For the caramel layer- Add sugar and water to a saucepan and mix well. Fire up the stove to med high and let it come to a boil and change color - about 5-6 minutes. Don’t touch it until it reaches the right color and consistency. Immediately pour into round baking dish and swirl to coat. Set aside.
In a mixing bowl, add eggs, sugar, pumpkin purée, vanilla extract, salt, and spices together. Mix it well and slowly add warmed milk while whisking.
Once smooth, add into baking dish and put into oven at 325 degrees with a water bath for 45-55 minutes until semi done. The middle should still be jiggly but outside will be set.
Let cool completely, cover and refrigerate overnight. When ready to serve, flip onto a large platter or plate, cut and enjoy!
