Okonomiyaki - a savory Japanese cabbage pancake with homemade kewpie mayo. Check it out!
2 cups shredded / chopped green cabbage
½ cup onion, sliced
½ cup all purpose flour
¼ tsp baking powder
⅛ tsp baking soda
½ tsp umami powder from TJ’s (optional)
Kosher salt
1 egg
½ cup water
3 slices bacon, chopped and cooked
In a bowl, combine all purpose flour, baking powder, baking soda, umami powder, salt & pepper. Mix well and add egg and water. Mix again until you get a thin batter.
Add the shredded cabbage and onion, mix well and set aside.
In a frying pan, cook the bacon until it’s golden brown and transfer to the cabbage mixture. Mix well and with the residual bacon fat, add half of the cabbage to the pan and cook on medium heat for 5-8 minutes until golden brown. Flip and cook for another 3-5 minutes.
Transfer to a plate and serve with okonomiyaki sauce, kewpie mayo (check out the homemade kewpie mayo recipe here!), seaweed, and bonito flakes. Enjoy!
