Thai Noodle Crunch Salad

As the weather is warming up, every meal is a salad for me now. Been playing around with a lot of different versions and this is one of my new faves! A Thai Noodle Crunch Salad with mangoooooes! So refreshing and delish. I used what I had at home for a salad but any combo of your favorites work, just add mango slices, some fried onions, mint, and peanuts for a delicious crunch. Cukes, carrots, zoodles, or red bell pepper slices would definitely work in this too!

The dressing- Soy Peanut Vinaigrette is key:
2 tbsp creamy peanut butter
2 tbsp fresh lime juice or rice vinegar
1 tbsp soy sauce
1 tablespoon honey
1 teaspoon toasted sesame oil
1 teaspoon red curry paste or sriracha
1/4 teaspoon grated ginger
1 clove minced garlic
2 tablespoons water

  1. Combine everything in a jar and mix mix mix. Enjoy!
