What do you get when you smash 2 classic favorite desserts together? This S'mores Chocolate Chip Cookie Bar! Its ooey, goeey, and delicious, and super easy too!
1¼ cup all purpose flour
1 stick or 4oz salted butter
¾ brown sugar
¼ cup white or granulated sugar
1 egg plus
1 yolk
½ teaspoon kosher salt
½ teaspoon baking soda
1 teaspoon vanilla extract
½ cup mini marshmallows
½ cup chocolate chips
3 graham crackers, crushed
In a large bowl, combine brown sugar, white sugar, and melted butter. Mix well and then add the egg and egg yolk. Mix it well until everything is smooth, glossy, and lava like.
Add the kosher salt, baking soda, vanilla extract and mix again.
Add the flour, mini marshmallows, chocolate chips, and crushed graham crackers then mix well.
Transfer to a lined 8x8 baking pan and bake at 350 degrees for 6-7 minutes just until it's barely cooked but the top is starting to look firm.
Pull from the oven and add another layer of marshmallows - i usually do like a handful and handful of chocolate chips on top.
Put it back into the oven and bake for another 5-6 minutes or until the top of marshmallows look golden brown and puffy.
Remove from oven and let it cool for 10-15 minutes. If you want them to be firmer bars, let them cool for about an hour. Either way, cut and enjoy!! I like them warm and gooey but they're SO good firm too - the perfect cookie smores treat!!
