Gingerbread Spice

Gingerbread is probably my favorite Holiday flavor / smell. I love Gingerbread tea, cookies, candles, you name it! So it comes as no surprise that when I wanted to bake a quick bread, I decided to whip up a Gingerbread quick bread loaf. Or a quick gingerbread loaf to be efficient.

I was determined to make this recipe perfect. Not too sweet, not too dry, not too cakey, just right. The first time I baked it, it didn’t rise high enough. The second time I baked it, too much mollasses flavor. The third time, not sweet enough. However each time I baked it, my house was filled with the cozy smell sweet, warm, and spicy notes from the ginger, cinnamon, and brown sugar. It’s a scent that just warms me up this time of year, never mind that it’s still like 75 degrees in LA.

Here we are with the final and per-fected recipe. I’d say it’s pretty darn good. I am planning to package it up in mini loaves and give them to our neighbors and friends. I hope they’ll enjoy the bread as much as I enjoyed making them!!

Gingerbread Spice Quick Bread

A delicious warm and spicy quick bread that's perfect with a cup of coffee.

prep time: 15 minscook time: 25 minstotal time: 40 mins

ingredients

1 1/2 cup flour
1/2 cup almond flour
1/2 tsp kosher salt
1/2 tsp baking soda
1 tbsp cinnamon
1 tbsp ginger
1/2 tsp nutmeg
1/2 tsp ground cloves
1/2 cup milk
2-3 tbsps molasses
1 stick butter, room temp
1/2 cup brown sugar
1 tsp vanilla extract
1 egg, room temp

instructions

  1. Preheat oven to 350 degrees.

  2. In a bowl, mix flours, salt, baking soda, and spices together. Set aside

  3. In another bowl, add butter and sugar together and mix with a hand mixer until light and fluffy, 2-3 minutes. Add vanilla extract and egg and mix until incorporated.

  4. Add molasses into butter mixture and mix again.

  5. Alternating between flour mixture and milk, add to the egg mixture and mix with hand mixer until just combined.

  6. Pour batter in to a 9 x 5 loaf pan lined with parchment paper. You want to create like a sling to remove the bread easily.

  7. Bake for 20-25 minutes until golden brown. Remove from oven and let cool. Dust with powdered sugar and enjoy warm with a cup of coffee.

NOTES:

*I added almond flour because I like how it adds a fluffier texture. Feel free to omit and use just AP flour.
