Thanksgiving is my hands down my favorite holiday. The food, recipe testing, Black Friday, the kick off to the Holiday season! I always love this year, but with a new baby I decided to take it easy by taking some cooking shortcuts for this Thanksgiving.
I went to Trader Joe's and found some amazing "helpers" there! There is this cauliflower rice stuff in the frozen section that I decided to use / amp up with my cornbread mix and fresh herbs. Then there is this pumpkin ravioli that I decided to dress with a browned butter sage sauce. Finally, appetizers and drinks are always a great way to get people mingling, so I made a brie that bakes in its own container that can be made sweet or savory depending on your topping.

Pumpkin Ravioli with browned butter sage
1 packet of pumpkin ravioli (butternut squash would work too)
4 tbsps unsalted butter
1 tbsp parmesan cheese
10 sage leaves
Cook raviolis to package directions
In a medium sauce pan, on medium low heat, melt butter and let it cook until milk solids sink to bottom and brown. Once ready, add sage leaves one at a time. (Make sure leaves are completely dry).
Plate raviolis and add grated parmesan. Pour over butter sauce and serve.
Riced Cauliflower Cornbread Stuffing
1 packet of riced cauliflower from TJ
1 box of cornbread stuffing
1 clove minced garlic
1 tbsp rosemary
2 tbsps parsley
1 tbsp sage
3 1/2 - 4 cups chicken broth
Preheat oven to 350 degrees.
Cook riced cauliflower according to package direction. Let the vegetables brown up and then add in the herbs and garlic. Mix well.
Pour in cornbread stuffing mix (without seasoning) and chicken broth. Mix well until cornbread absorbs all the liquid.
Pour into oven safe pan and bake for 30-40 minutes, until top is golden brown.
Baked Brie with Orange and Pomegranates
1 wheel of brie in wood container
1 tbsp orange marmalade
1 package of dried orange slices
1 handful of pomegranate seeds
1 handful of pecans
Take one wheel of brie and unwrap from packaging. Place brie back into wood container onto a baking sheet.
