This recipe was inspired by the popular ice cream, Cherry Garcia by Ben & Jerry's! I was at the farmer's market and noticed all of these beautiful bing cherries. In true "Dzung" form, I bought way too many - my only plan was to eat them plain. That's when this idea for this bar came about! What can I make with cherries that would be interesting? Cherries Jubilee was the first thing that came to mind, but I feel like that's my parent's era when that was considered good. Anyhow, this recipe is a mix of blondies bar with chocolate and cherry bits. It's quite delightful and so easy to make! Full recipe in video below.
Cherry Garcia Bars Recipe:
1 stick of melted butter
¾ cups of dark brown sugar
1 egg
1 tsp of vanilla extract
¼ tsp of kosher salt
⅛ tsp of baking soda
1 cup of all purpose flour
¾ cups of chocolate chips
1 cup of cherries
Preheat oven to 350 degrees.
Line 8x8 pan with parchment paper, set aside.
In a large bowl, mix melted butter with dark brown sugar and mix until smooth. Add egg and mix well. Next, add vanilla extract, kosher salt, and baking soda and mix again. Add flour, chocolate chips, and pitted cherries, stir to combine.
Pour batter into baking pan and bake for 18-20 minutes until middle is set and edges are golden brown. Remove from oven and let cool for 10 minutes. Cut into bars and enjoy!
