These Vietnamese Egg Rolls are inspired by the famous Golden Deli located in San Gabriel Valley outside of Los Angeles. Great to get your Vietnamese food fix!
½ cup finely chopped jicama
½ cup finely chopped white onion
1 carrot shredded
3 tsp salt
1 lb ground pork
½ cup vermicelli (bean thread)
¼ cup chopped wood-ear mushrooms
1 tsp salt
1 tsp ground pepper
1 tsp sugar
Place the jicama, white onion, and carrot a bowl. Mix in 3 tsp salt to extract the liquid. Set aside 5 minutes and drain out all the liquid.
Place the de-hydrated vegetables in a large bowl. Add in the other ingredients and mix together until the filling comes together.
Wrap 2-3 small scoops of the filling in wet rice paper or wheat paper, roll, seal, and fry in oil (300-350ºF) for about 7 minutes until crispy and golden brown.
Serve with fresh lettuce, herbs, and fish dipping sauce. Enjoy!
