I love Starbucks’ Spinach Feta Wrap when I’m in a bind, but making it at home is so easy and I can add more things to make it even more satiating, like this jammy tomato hummus that is creamy and delicious. Breakfast at home just got 100x times better. Enjoy!
2 egg whites
1 tbsp sun-dried tomatoes
1 tbsp olive oil
1 garlic clove
a handful of spinach
2 tbsp feta cheese crumbles
½ tsp Italian seasoning
1 tortilla or wrap of choice
a dollop of hummus
In a bowl, separate two egg whites. Whisk and set aside.
In a skillet on medium heat, add the sun-dried tomatoes with their olive oil, minced garlic, and stir for 3 minutes. Add the spinach, feta crumbles, Italian seasoning, and mix until slightly wilted. Add the egg whites and before it’s done cooking, add some hummus spread, then place a tortilla on top. Let it heat through and flip.
Remove from pan, fold into an envelope, cut and serve. Enjoy!
