Beef Curry Udon

Japanese Beef Curry with Udon. Enough said! It was awesome to find these Japanese curry blocks that I ate all the time in college, and the shaved beef which complements the dish perfectly!


½ onion, chopped

3 cloves garlic, minced

½ lb shaved beef

1 cup sliced mushrooms, shiitake

2 tsp soy sauce

3 cups beef bone broth

½ pack or 4 cubes of japanese curry block

udon

sliced onions

  1. In a pot, add olive oil and then saute the onions and garlic for a minute. Next, add the shaved beef and sliced shitake mushrooms and cook through. Season with a splash of soy sauce and let it cook for another minute. Remove in a bowl and set aside.

  2. Deglaze the pot with the bone broth and lift the brown bits at the bottom. Add more broth and the Japanese curry block. Let it come to a boil and then add the udon package to warm through. Season to taste.

  3. To serve, add udon and curry to a bowl, top with the shaved beef and mushrooms, and sliced onions.
