This Ultimate Tuna Salad Sandwich is the ideal sandwich for a weekend picnic! I love a good picnic … on the beach, at the park, back off the car… it’s the casual vibe (that’s also kid friendly) that i don’t need to stress out about.
Tuna Salad
1 can of tuna, wild-caught and packed in olive oil
2 tbsp mayo, or greek yogurt to make it lighter
1 tbsp dijon mustard
1 tsp garlic powder
salt and pepper
juice of half a lemon
arugula
ciabatta roll
chopped pickles
dill
cucumbers, sliced
smoked mozzarella, sliced
avocado
microgreens
In a bowl, mix together the tuna, mayo, mustard, garlic powder, salt, pepper, and lemon juice until well incorporated.
Slice the ciabatta roll, or your bread of choice. On the bottom slice, layer your arugula, cheese, top with cucumber, pickles, and dill. Adding these ingredients first will prevent the bread from getting soggy. Then add the tuna salad.
Slice half an avocado and nestle it on top of the tuna salad. Top off with some microgreens and the top slice of ciabatta.
Cut in half. Pear with some salt and vinegar chips or a side salad. Enjoy!
