When you don’t want hot, soupy ramen but crave those flavors, this Butter Miso Stir-Fry Ramen will definitely satisfy!
Sauce
3 tbsp unsalted butter
2 tbsp white miso
1 tbsp soy sauce
1 tsp sugar
1 tsp rice vinegar
1 clove garlic, minced
1 tsp freshly grated ginger
4 oz fresh ramen or 1 packaged dry ramen, removing the seasoning
handful of spinach
Toppings
¼ lb ground pork
salt and pepper
Melt the butter in a small saucepan. Allow it to brown up and transfer it to a small bowl. Then add the miso, soy sauce, sugar, rice vinegar, garlic, and ginger. Give it a good mix. It’ll be nice, thick, and glossy.
Cook the ramen noodles, drain and rinse to remove excess starch. Set aside.
Heat up oil in a wok. Add in the ground pork and season with salt and pepper. Add in 1 tbsp of the sauce made earlier plus another crushed clove of fresh garlic. Cook the meat through and using the spatula, crumble it. Transfer to a bowl.
In the same wok, add the remaining miso butter sauce. Add in the ramen noodles and spinach. Heat through.
To assemble, add noodles to a bowl. Top off with ground pork, corn, furikake, togarashi, and sliced green onion for garnish. Enjoy!
