Every few weeks, we get blessed with a new viral food trend. The Cowboy Caviar is no exception!
Fun fact: this was actually developed by a chef from Neiman Marcus in the 1940s!
¾ red onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 orange bell pepper, diced
1 mango, diced
1 corn
black olives, drained and sliced
1 can black peas, drained and rinsed
1 can pinto beans, drained and rinsed
pickled jalapeños, chopped
2 avocados, diced
crumbled feta cheese
dressing
juice of 3 limes
½ cup olive oil
¼ cup white wine vinegar
3 tbsp taco seasoning *optional
2-3 tbsp hot honey
3 tbsp sugar
salt and pepper to taste
Dice up all the ingredients and place it in a large mixing bowl.
Mix up the dressing and pour it over the veggies and beans.
Serve with tortilla chips and enjoy!
