This Viral Mango Mochi 🥭🥭 has been all over my feed and I. Must. Try it. A warm and soft mochi blanket wrapped in a giant juicy ripe mango. It’s all I’ll be making this summer.
What other delicious fruits should I try to mochi-fy?
Mochi recipe:
1 cup glutinous rice flour
½ cup sugar
1 cup water
1 mango
Mix all the ingredients together in a bowl, cover with plastic wrap. Microwave for 1 minute.
Stop and mix the dough. Continue to microwave for another 2 minutes until soft and doughy.
Transfer to a cutting board heavily dusted with cornstarch and let cool slightly. Work in small batches to wrap the mangoes in a thin layer of mochi. Enjoy!
