These Salmon Mango Spring Rolls are one of my favorite things to make when the weather heats up! I love a good 2 in 1 recipe for the dipping sauce that also doubles as a marinade.
Garlic Soy Honey Glaze
ΒΌ cup soy sauce
2 tbsps honey
3 garlic cloves
1 tsp ginger, minced
1 tsp sesame oil
juice of half a lime
Mix all the ingredients into a bowl and take half to marinate the salmon. Once ready to cook, heat up the your pan and add oil. Sear the salmon on each side for 3-4 minutes until cooked through. Add to your favorite spring rolls veggies and enjoy!
To make peanut dipping sauce: use the other half of the reserved soy marinade and add 2tbsps creamy peanut butter and juice from the other half of a lime
