Spicy Chicken Ala Vodka Pasta

I put Gigi Hadid’s Vodka Pasta to the test!

1 clove garlic, sliced

1 tbsp olive oil

1 tbsp butter

8 oz rigatoni pasta, cooked and drained

½ cup pasta water

2 tbsp olive oil

2 chicken thighs, cut up into small pieces

4-5 garlic cloves, minced

½ a shallot, minced

½ cup mushrooms, sliced

2 tbsp sun dried tomatoes, sliced

1/4 cup tomato paste

2 tablespoons vodka

1/4 cup heavy cream

½ cup whole milk

1/4 cup parmesan cheese

1 cup spinach

salt and pepper to taste

pepper flakes (optional)

  1. In a pan on medium high, add a drizzle of olive oil and cook the chicken on each side for 4-5 minutes until cooked through. Remove and transfer to a plate.

  2. Add 2 tablespoons of olive oil and shallots. Cooked until golden brown and then add the garlic. Cook for a minute then add mushrooms and sun dried tomatoes.

  3. After a minute or so, add the tomato paste and let it caramelize a bit, turning a darkish red color. Add a sprinkle of pepper flakes, the vodka and stir.

  4. Now add the cream and milk and stir some more until it becomes a nice saucy sauce.

  5. Add the cooked rigatoni and chicken back in and simmer for a few minutes to heat through.

  6. Add the spinach, parmesan, salt and pepper, mix well and serve. Enjoy!
