House Foods Tofu Satay Skewers

This smoky grilled tofu paired with a nutty savory peanut sauce is your new favorite meatless Monday recipe.

I was inspired by the satay skewers that I often get when we go to Thai restaurants, but since it’s been a while since I’ve been able to enjoy them, I thought I’d recreate my own. I love this because it’s a 2 for 1 deal - basically, if I decide to have the skewers on their own, they make for a lovely and hearty appetizer. If I want something a little more substantial, I add a skewer or two to a rice bowl filled with fresh veggies and the peanut satay sauce flavors everything well. This recipe is super simple and comes together so quickly for a weeknight meal.

For the tofu, I used Organic Firm from House Foods. Firmer tofus are best for grilling because it stands up to high heat and doesn’t break or fall apart. House Foods is made with 100% non-GMO U.S. soybeans. Sometimes I don’t want to have meat and this is a great option since tofu provides protein – it is just plant-based!

House Foods Tofu Satay Skewers


Here’s the recipe:

1 box of House Foods Organic Tofu, Firm


Peanut Satay Sauce

3 tablespoons natural peanut butter

2 tablespoon soy sauce

1 tablespoon rice vinegar

2 teaspoons packed dark brown sugar

1 teaspoon freshly grated ginger

1 clove garlic, minced

1-2 tablespoons water

 

 

In a bowl, mix together all of the ingredients until it comes together. Separate the sauce in half and use for the following:

For the tofu marinade: Add an extra 2 teaspoons of fish sauce and 2 tablespoons of water to thin out.

For the dipping sauce: Thin out with a little bit of water until it reaches preferred consistency. You want it thick and dippable but not too runny.

 

To prepare the tofu:

  1. Wrap it around a kitchen towel and press down to release excess water.

  2. Cut the tofu into 4 thick slices. If you prefer them a bit thinner, cut 6 thick slices horizontally. I tend to like mine on the thicker, more “meaty” side. Place the tofu into a square container and pour the tofu marinade over. Cover the tofu with the sauce completely and let it marinate for at least 30 minutes to absorb the flavor.

  3. Brush the grill grate with a little bit of oil to prevent sticking and grill on high heat for 3 minutes on each side. I like to grill it on all 4 sides.

  4. Add skewers to the tofu and serve with peanut satay dipping sauce. Garnish with more peanuts, lime, and cilantro.

 To assemble the rice bowl, add your favorite fresh vegetables and serve with extra peanut sauce.
