Italian Salsa Verde Salmon Salad

This salmon with italian salsa verde dressing is actually one of my favorite salads, guaranteed to boost your energy.  We’ll start by making the italian salsa verde - which is an italian version, very similar to chimichurri vs. the mexican salsa verde which uses tomatillos.

Italian Salsa Verde:
1 cup of parsley
2 anchovy fillet - you can use the paste if you’d like - just 1 tsp would work. This really gives it that rich umami flavor
Lemon zest
Juice half a lemon
1 tbsp red wine vinegar
1 tbsp capers
Olive Oil
Salt and pepper

In a food processor, gIve the ingredients a whirl and that is your dressing / salsa verde. Use this as a dip for bread, salad dressing, sauce for our salmon. It goes with everything. 

Now for the salmon, I’ll just sear it up! I’m using this saku cut that is cut like a block. I’ll sear each side for 4-6 minutes until it’s nice and golden brown - and then it goes directly onto my salad which I already have ready. There’s lettuce, green beans, potatoes, egg, tomatoes - i was inspired by a nicoise but we’re going to use a salsa verde dressing. Top it with my salmon and the sauce goes on top. Let’s break into this salmon. It’s soft, tender, the salmon is flavorful on it’s own but with the salsa verde, it just takes it to the next level.
