If you love Ramen, you’ll probably love this one! While it’s not the soupy type, but here, I use your favorite noodles in a different way and toss it in a light sesame soy dressing. Top it with some meat and veggies for a substantial meal and it's a quick and easy salad you’ll be making over and over again.
To make the beef marinade:
1 lb top sirloin or your favorite cut of meat
¼ cup soy sauce
1 teaspoon worchestershire sauce
1 tablespoon dijon mustard
1 teaspoon sugar
4 cloves minced garlic
Pepper
In a shallow container, combine all of the ingredients and add the beef to marinade.
Marinate for 4 hrs to overnight in the fridge. When ready to cook, grill each side for 4-5 minutes for a medium medium rare temp. Let it rest for 10 minutes and then slice.
To make the dressing: This is a sesame soy dressing that you might recognize from your favorite Japanese restaurant.
¼ cup orange juice
¼ cup toasted sesame oil
¼ cup tahini dressing
¼ cup soy sauce
2 tablespoons rice vinegar
2 tablespoons honey
1 clove garlic
In a bowl, mix everything together until the tahini is emulsified. It’ll continue to bloom as you let it sit, so even fi it doesn’t look fully mixed it will in a about 10 minutes. Just give it another good mix once that happens.
To assemble the bowl:
Add mixed greens and then add the ramen on top. Dress with the sesame dressing and add your favorite vegetables / toppings. I like adding red bell peppers, mangoes, cucumbers, and the beef. Garnish with cilantro or scallions, and voila! A delightful meal.
