Chicken Adobo Enchiladas with home Chef

Date nights out are getting harder and harder to come by these days. I remember the days when we would explore new restaurants back in the Bay Area, and Nate would always steer us to some Mexican haunt, sometimes for a late night burrito. Luckily, even though we stay in more often now, we are still able to get those spicy favorite flavors when cooking with meal kit services like Home Chef! Making Mexican food is not my forte, so I’m glad that everything comes already measured so all I need to do is prep and cook, and the delicious meal is ready in about 30 minutes!

I really enjoyed this Adobo Chicken Enchilada - the last time I made them must have been years ago! I remember how long it takes to make everything but this kit cut the time in half! Mmm that adobo sauce blew my mind.
