Happy First Day of Fall!!!

I’m back with another baking recipe - two to be exact! The first one is a savory everything bagel seasoning one that I had to recreate after having one at Voyager Coffee in San Jose. Why have I not thought of that before? Everything seasoning is better on a scone than a bagel for me. What about you?

The second recipe is a must have for Fall, a pumpkin spice scone. I did a copycat version of the popular Starbucks scone, except I think the homemade version is so much better! I did a full taste and texture comparison on the video (and full tutorial here) and the homemade one was a clear winner. I think homemade will always beat pre-made pastries from any coffee shop, unless it’s freshly baked that morning like Republique! I bet they would have an amazing pumpkin scone! SPEAKING of which, that reminds me, I know exactly what the next baking video will be. Mwahahahhaahah! If you follow me on Instagram then you might be able to guess, but stay tuned until next week!

Here are the recipes:

Everything “bagel” Scones

2 cups all purpose flour
1/2 cup butter, grated
1/4 cup cheddar cheese, grated
1 1/2 tsps baking powder
1/2 tsp baking soda
1 tbsp Everything Bagel Seasoning (Trader Joe’s is my favorite)
1/2 tsp kosher salt
1 tsp sugar
1 egg
1/3 cup heavy cream

For topping:
2 tbsps heavy cream
1 tbsp Everything Bagel Seasoning

Preheat oven to 400 degrees
1) In a large bowl, combine flour, baking powder, baking soda, everything bagel seasoning, salt, and sugar. Mix well until combined.
2) Next, add COLD grated butter and cheese. Toss gently with hands. Set aside.
3) In another bowl, whisk egg and cream together and then pour into the flour mixture.
4) With a spatula, mix dough until flour just starts to incorporate. Pour out onto clean work surface and fold the dough over until flour and mixture is completely combined. Be careful not to overwork the dough. Just fold it over enough so it stays together.
5) Pat the dough into a circle and cut into 6 wedges.
6) Transfer to a baking sheet lined with parchment paper. Brush scones with whipping cream and sprinkle more everything bagel seasoning on to.
7) Bake for 20-22 minutes until golden brown. Remove from oven and cool for 5 minutes then serve.

Pumpkin Scones Recipe:
1/2 a can of pumpkin puree (about 3/4 cups)
1/2 cup brown sugar
1 egg
1/4 cup heavy whipping cream
1 tbsp vinegar
1 tsp vanilla extract
2 cups all purpose flour
2 tbsps pumpkin spice mix
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp kosher salt
1/2 cup unsalted butter, grated

*DIY Pumpkin Spice Mix:
3 tablespoons ground cinnamon
1 teaspoons ground ginger
1 teaspoon allspice
1 teaspoon ground cloves
1 teaspoon ground nutmeg
Mix together and store in an air-tight container.

1) In a bowl, combine pumpkin puree, brown sugar, egg and whisk until smooth. Then add whipping cream, vinegar, and vanilla extract and mix again until thoroughly mixed. Set aside.
2) In another large bowl, mix flour, pumpkin spice mix, baking powder, baking soda, kosher salt and mix until combined.
3) Grate 1 stick of cold butter and add to flour mixture. Gently mix with hand until completely coated. Break up any large lumps.
4) Add pumpkin puree mixture and mix with spatula just until flour begins to mix through. Dump onto working surface and continue to fold dough together until it just comes together. Be sure not to overwork the dough.
5) Pat the dough into a circle and cut into 6 wedges.
6) Transfer to a baking sheet lined with parchment paper. Brush scones with whipping cream.
7) Bake for 20-22 minutes until golden brown. Remove from oven and cool for 10 minutes.
8) Pour glaze over scones and let it sit for 10 minutes. Serve and enjoy!

To make the glaze:
Plain glaze:
1 cup powdered sugar
1 1/2 tbsps milk

Spiced Glaze:
1/2 cup powdered sugar
1 tbsp milk
1 tsp pumpkin spice mix

Add ingredients into a bowl and mix until smooth. Glaze should be thick.
